. . . onto the Perfect Tea Sandwich . . . OK, we all know that the sandwich is a British invention thanks to John Montague, the 4th Earl of Sandwich. But, do you know from where his inspiration came? Sir Montague was a seasoned gambler and to avoid leaving his and of cards popped some roast venison between two slabs of bread and munched away . . . Or, so the story goes . . .
Tea Sandwiches are, for me, the most uninspiring part of Afternoon Tea. They are always made with thinly sliced white, whole wheat or rye breads. The bread is then thinly spread with soft butter to prevent them from becoming soggy, and the crusts are removed. Typically, sandwiches served with Afternoon Tea are:

- Cucumber
- Egg and Watercress
- Smoked Salmon and Cream Cheese
- Coronation Chicken — a combination of diced chicken with a bit of créme faîche, mango chutney, curry powder, lime zest, fresh lime juice and salt to taste that has been chilled until serving. Raisins and flaked almonds are sometimes added.
- A variety of combinations including: grated beets or carrots, goat's cheese, crumbled Stilton and bacon, aged Cheddar, salmon salad, roasted meats
- flavored butters, chutneys and shredded greens can also be used
